Ahhhhhhh! That was me getting a little keen-wa for dinner time (hey hey heyyyyyy). This is a great twist on a conventional recipe that is simple to make.
1/2 a red onion (yellow is fine too, but red is prettier)
1/2 a glove of garlic grated
2 tablespoons of canola oil
1/2 a teaspoon of chilli flakes
1 teaspoon of ginger
1/2 cup of cooked quinoa
1 tablespoon of frozen corn
1 tablespoon of frozen peas
3 tablespoons of soya sauce
1 tablespoon of honey
1 chicken breast
1 teaspoon of grated ginger
Mix together 2 tablespoons of soya sauce, 1 tablespoon of honey and a teaspoon of ginger in a bowl.
Cut up the raw chicken breast and place it in the soya sauce- honey marinade. Cover and pop it in the fridge, for one hour.
Lightly fry the chicken till golden, sticky and delicious. Remove from the pan.
Heat the oil and saute the onions, garlic, ginger and chilli. Until the onions are soft and your kitchen smells heavenly.
Add the corn and peas and fry for about 2 minutes and then add the chicken.
Push all the ingredients in the pan to the side. Scramble/fry the egg- this happens when you don't let the egg fry all the way through, and start to scramble it just before it's done. (** you may have to add a little bit more oil before you add the egg)
Mix the egg with the chicken and onion mixture and add the quinoa and mix together.
Pour the remaining soya sauce over and pop in a bowl.
