This is possibly the greatest most delicious sandwich I have ever made! The key ingredient that brings it all together is a sneakily scrumpitious chickpea spread (okay, I'm done with the adjective overload)
2 slices of low gi bread
2 slices of ham
2 slices of cheese (I'm a sucker for some mature chedder)
1/2 an avocado
A handful of english spinach
4 slices of fried aubergines (aka the poor man's caviar)
1 tablespoon of chickpeas
1 tablespoon of cream cheese
A dash of paprika
3 florets of steamed broccoli
1 teaspoon on chives
A sprinkling of salt and pepper
Steam the broccoli in a pot or in the microwave for 2 minutes until bright green and set aside to cool.
In a chopper or a blender place the chickpeas, cream cheese, paprika, cooled broccoli, chives, salt and pepper and smoosh it all up till you get a smooth creamy spread.
In a pan lightly fry 4 slices of an aubergine until golden and set aside
Now we are ready for the fun part - the assembly!
Evenly spread the chickpea and broccoli mix onto one slice of bread.
Top with fried aubergine, ham, cheese, spinach and avocado.
Place the remaining slice of of bread on top and let your taste buds go to heaven!
