Because either you are a Mexi-can or a Mexican't! This breakfast is perfect for when you have a big day and are in need of an 'I gots this feeling!'. Bonus tip: you can wrap it up and have it on the go! (did you catch that?)
1 wholewheat wrap
1 tablespoon of sour cream
1 tablespoon of salsa
1/4 yellow pepper
5 cherry tomatoes
A handful of english spinach
2 eggs (Beaten not stirred)
1 tablespoon of oil
Chilli Flakes (Optional)
Garlic Flakes (Optional)
Place a pan on a medium heat with a tablespoon of oil, and gently fry the sliced peppers and halved cherry tomatoes.
Once soft, toss in a handful of spinach and watch it slowly wilt into all the deliciousness (If you want you can sprinkle over some garlic and chilli flakes, salt and pepper) once it is all cooked, set a side.
In the same pan, pour your eggs and slowly scrambled them untill soft and fluffy. Remove from the pan and place in the same bowl as your veggies.
Heat your wrap in the microwave (normally for 15 seconds) and spread sour cream and salsa all over it.
Top with veggies and scrambled eggs and have yourself a wonderful day
