So you forgot it was Mother's Day. You didn't buy the flowers, get a gift or even a card and now you stressed because the women who brought you in this world is about to wake up and see the guilt written all over your face!
Ashleigh's Kitchen to the rescue! Get your bum out of bed and into the kitchen and start making these mouthfuls of breakfast heaven.
1 punnet of mushrooms sliced
2 gloves of garlic
1 tablespoon olive oil
1 teaspoon of chilli flakes (optional)
1 packet of shoulder bacon
a small bag of rocket
1 punnet of cherry tomotoes
1 tablespoon of lemon
Salt and pepper
Preheat the oven to 180 C
Place a deep pan on a medium heat, add olive oil, chopped onions and garlic and saute until the onions are translucent.
Add the chilli flakes and mushrooms and cook until mushrooms are soft anf delicious.
In a muffin pan place 1 piece of shoulder bacon (the round shape of the bacon will fit perfectly into the muffin pan)
Pour the onion and mushroom half way into the bacon cup and crack an egg on top.
Place in the oven for 15 minutes.
Slice cherry tomotoes in half, cover with lemon juice, a crushed clove of garlic and season with salt and pepper.
Gently fry the cherry tomatoes in a pan on a low heat and then simply pour over a bed of fresh, crisp rocket.
Toast the bagels, spread over some cream cheese and top with your rocket tomato salad.
Place two egg and bacon cups on the plate.
Make your Mum some tea/ coffee
Write a note that says 'I Love You, Happy Mother's Day'
Place everything on a tray, wipe that guilty look off your face and go and surprise your Mum with breakfast in bed.
