The other day I was far to lazy to go to the shops and buy food but starving at the same time! I peered into my fridge for far too long hoping for a spout of inspiration and pulled out beef strips and peppers. Then I got it- a quick and east stir fry with jasmine egg fried rice. I amaze myself sometimes and hopefully you will too.
250g of beef strips
3 tablespoons of canola oil
1 green pepper cut into strips
1/2 a red pepper cut into strips
1/2 a yellow onion
3 tablespoons soy sauce
1 1/2 tablespoons of rice wine vinegar or apple cider vinegar
2 teaspoons of good chilli garlic sauce (I used sriracha)
125 ml of cooked jasmine rice
Add 2 tablespoons of oil to the pan and set on a high heat
Coat the beef strips with a good dose of salt and pepper and fry in a hot pan, 2 minutes each side should do the trick
Set aside and gentle fry the onions and peppers until the onions become translucent and then removed from the pan
While you are frying the onions and peppers in a bowl mix the soy sauce, chilli sauce, ginger and vinegar together.
Add the mixture to the hot pan and let cook for 1 minute until it becomes sticky and add the beef, onions and peppers - coat well.
Egg fried rice
Cook rice according the package instructions and set aside
Roughly beat the egg you don't want it completely emulsified
Add oil to a pan and fry some green onions
Add the egg and stir as if you were making scramble eggs
Add the rice and mix together
This makes enough to feed two or one if you are really hungry
