Yes we know, we know winter is here, it's cold! But you know what is great about the cold weather ? Nothing. Nothing is great about the cold weather except if you happen to be in doors with the heater and your winter bae (aka your electric blanket) on.
Now that I have finished my rant let me introduce you to my all year round obssession - oats. Fridge oats, pot oats, instant oats, plain oats, decadent oats - I have tried them all and today as a winter warming gift I give you 'Luxurious Breakfast Oats'.
What makes these oats so delicious? They are cooked in milk (because there is nothing luxurious about water).
1/2 cup of steel cut oats (not the instant kind)
150 ml of milk
100 ml of water
1/2 an apple
1 teaspoon of freshly grated ginger
1/2 teaspoon of cinnamon
2 teaspoons of chia seeds (optional)
2 teaspoons brown sugar
1 tablespoon of flaked almonds
Peel, core and chopped the apple into small bite size chunks.
Place a small pan on a high heat and pop all the ingredients in.
Bring to the boil and then turn down to a low heat and let simmer for 3-4 minutes (or until most of the liquid has evaporated and your oats have thickened).
Toast the flaked almonds on a high heat until golden brown.
Top oats with golden almonds and enjoy!
