Can we just talk about how perfect breakfast food is? Savoury or sweet and perfect for any time of the day. Normally I prefer mine with bacon and syrup - don't knock it till you try it! But today I opted for a 'healthier' version (you know, so that I can get it all this morning).
1 slice of bread (brown or white will do)
2 teaspoons of milk
1 tablespoon of butter
A handful of blueberries
1 heaped tablespoon of full cream greek yoghurt
2 tablespoons of honey
1 sprig of mint
Beat the egg with a fork and add milk.
Cut the bread and soak in the egg mixture until the egg is completely absorbed.
Place a pan on a medium heat and melt the butter until it starts to bubble.
Add the egg soaked bread and cook for about 2-4 minutes on each side (until golden brown).
Remove and place on a plate.
Place honey is a microwave safe container with mint and heat for 1 minute until the honey is soft.
Remove the mint and pour over the toast, add blueberries and yoghurt.
