I have been running around like a crazy person (trust me I never run around like a normal person), and had no time to cook, hence the lack of blog posts. Sorry, you deserve better. I came home one day to Mum making one of her favourites- Stir Fry!
Packed with a variety of veritable vegetable goodness (I love a little alliteration), and tasty chicken pieces, you simply can't go wrong with this recipe.
2 tablespoons of sesame seed oil
2 carrots julienned
1/2 small cabbage chopped
1/2 red bell pepper sliced into strips
1 small packet of broccoli
a handful of sprouts
2 spring onions sliced
2 chicken breasts
2 gloves of minced garlic
2 teaspoons of grated ginger
3 tablespoons of soy sauce
1 teaspoon of chilli
1 tablespoon of honey
Cut the chicken into strips and place in a bowl, coat with soy sauce, garlic, ginger, chilli and honey.
Place a pan on a high heat and add the oil.
Add the chicken and cooked until golden brown and remove from the pan.
Stir fry the shallots, carrots, cabbage, red pepper, broccoli, sprouts, spring onions until cooked but still firm.
Add the chicken back to the pan and stir into the veggies.
Serves with rice or noodles. I like to add extra soy sauce and sweet chilli sauce for some extra Flava Flav!
