Dinner for me is not normally complete without a side of roast chicken, steak (for when I'm feeling lavish), lamb chops (again for the lavish feeling) or pork belly (ahh pork belly) but sometimes my appetite is like naaaah, I can't please give me all of the vegetables?! And when the craving hits I turn to my all time favourite - veggie tacos!!
Cooking 10 minutes
1/4 of an onion, chopped
1/4 of a pepper (yellow or red), chopped
1/2 a cup of sliced mushrooms
1/2 a small sweet potato, finely sliced
1/2 of spinach leaves, roughly chopped
1/4 teaspoon of paprika
1/4 teaspoon of cumin
1 clove of garlic, minced
1/4 teaspoon of chilli flakes
1 whole wheat wrap
2 tablespoons of mozzarella cheese
1 tablespoons of salsa
1/2 an avocado
1 tablespoon of olive oil
Place a pan on a medium heat and add the olive oil.
Place raw sweet potato slices in the microwave and cook for 3 minutes.
Gently fry the onions, peppers and mushrooms. Once soft add paprika, garlic, cumin and chilli flakes and stir.
Add the sweet potato slices and spinach. Cook until the spinach has wilted and the potato slices are golden brown. Set aside in a bowl.
In the same pan add the wrap, sprinkle the cheese on one-half and let melt before spreading the salsa on top of the cheese.
