You know those mornings, when the party has been too delicious the night before and you wake up ravenous (pretty much me every Sunday)! All you need is food, good simple easy delicious food. Well here is my favourite - bacon and eggs (obvs) with a side of marinated tomatoes and chilli tomatoes!
4 rashers of shoulder bacon
1/2 an avo
6 cherry tomatoes
1 small clove of garlic
1 tablespoon of lemon juice
salt and pepper
2 teaspoons of butter.
Chilli flakes (optional)
1 teaspoon of milk
Firstly slice the tomatoes in half, and place in a bowl. Cover with lemon juice, 1 minced clove of garlic, salt and pepper.
Set your oven to grill and place foil on a baking tray and evenly spread out your bacon. Make sure that you set the oven rack in the upper part of the oven but not directly under the grill.
In a small pan melt 1 teaspoon of butter on a medium heat. Slice the mushrooms and gently fry with the tomatoes and a sprinkling of chilli flakes until soft.
Crack the 2 eggs into a bowl and beat with a teaspoon of milk. In a separate pan, melt the other teaspoon of butter and add the eggs. The heat should be low-medium, continuously stir the eggs while they cook. The eggs should not be dry but rather fluffy and moist.
At this point,everything should be ready, place eggs, mushrooms, tomatoes and bacon on a plate and scoop half out the avo.
