Bananas a are a staple in my kitchen every. single. week! Mainly because I love a good banana and peanut butter smoothie (should I post a recipe for this? Wait why is that even a question, of course, I will).
Now because we are getting into summer and my tiny kitchen does not have enough ventilation my bananas are ripening faster than I can eat them which only means one thing: BANANA bread!
2-3 medium ripe ripe ripe bananas
1/3 of cup melted butter
1 teaspoon of baking soda
1 teaspoon of vanilla
1/2 cup of sugar
1 1/2 cups of flour
*10 pecan nuts roughly chopped
Preheat the oven to 180 degrees Celsius.
In a bowl mash the bananas until smooth.
Melt the butter and add to the bananas, mix well.
In a seperate bowl beat together the egg and vanilla, before adding to the banana mixture.
Add sugar and combine.
Lastly add the flour and baking soda and mix slowly until all the flour has been incorporated into the mixture.
Mix in the chopped pecan nuts and pour into an 11 x 21 cm loaf tin.
