At the request of a fan (yes apparently I have those- Mama, I've made it), I developed the world's BEST chicken sandwich. It is called this because when I typed into google 'world's best chicken sandwich' I found nothing inspiring, nothing different nothing that made me go ooh, ah!
Now, because it is the world's best, it takes a bit of time, but good things come to those who wait. Yes, I know the suspense is killing you, so let's get to it.
Serves: 4 not so hungry people, or 2 very very very hungry people
2 chicken breasts
8 strips of streaky bacon
1/2 a bunch of spinach
1 round of feta
The Chimichurri Mayo
1/2 a bunch of fresh parsley
2 gloves of garlic
2 teaspoons of olive oil
1 teaspoon of red wine vinegar
Salt and pepper
1/2 a teaspoon of chilli flakes
A squeeze of lemon juice
3 teaspoons of mayo
3 teaspoons of English mustard
1/4 baby cucumber
1 red roasted pepper
A good handful of herb salad
Start with the chicken and preheat the oven to 180 degrees celsius.
Loosely wrap the chicken breast in some cling film and beat flat with a rolling pin, till the chicken is a uniform thickness. Repeat with the other chicken breast.
Bunch up the spinach and slice, mash together with feta for about 3 minutes. The spinach and feta will combine into a thick paste-like consistency.
Spread the spinach mixture on one-half of the chicken and fold over the other half.
Now wrap your little chicken parcel in bacon and place on a grill.
Cook for 40-50 minutes.
Add an extra 5 minutes under the grill to crisp up the bacon.
Coat the red pepper lightly in olive oil and place in the oven on a separate tray.
