Why is it Monday already!? I now have to wait a whole week till I can make brunch again! But in the meantime, and to get you day dreaming about next weekend here is my cheesy, herby crusted eggs.
Damn! Look at those eggs! Don't they look all sorts of delicious? These, I feel, are going to become a staple in my brunch repertoire. Hot, cheesy, flavourful and contain all of the garlic, they tick every box.
1 tablespoon of unsalted butter
2 tablespoons of thick cream
1-2 tablespoons of parmesan
1 teaspoon of thyme
1 teaspoon of rosemary
1 teaspoon of parsley
1 clove of garlic
salt and pepper
Set your oven to grill
In a separate bowl place, the grated the cheese, minced garlic and chopped thyme, rosemary and parsley, and set aside.
In a shallow ovenproof dish about 15 m x 10cm (or ramekins - 1 per egg), place the butter and cream. Pop in the oven until the butter and cream start to bubble.
While the dish is in the oven, crack the eggs into a cup - make sure not to break the yolk.
Remove the dish from the oven and gently pour in the eggs. Top with cheese and herb mixture and season with salt and pepper.
Pop back in the oven for 5- 7 minutes, until a golden crust forms on the top.
