Now if you have been following my blog you know that I eat oats pretty much every week - they are my Monday to Friday go to. They are apparently low GI, which helps keeper me fuller for an extra 10 minutes longer than cereal does.
Now I created these from all the leftovers that were in our fridge and right now I'm working on a savoury version - sweet potato and sage oats anyone?
1/3 cup oats
1 cup water
a pinch of salt
1 tablespoon of pomegranate seeds
100 ml of milk
1 teaspoon of honey
3 leaves of fresh mint
In a sauce pan place the oats and water (you can vary the amount just keep the ratio of 1 part oats to 3 parts water).
Bring to the boil and let simmer for 3 minutes until thick and soft.
Pour into a bowl, top with chopped pieces of plum and pomegranate seeds.
Pour in the milk (I like mine cold, but you can warm it up before you add it), and sprinkle over some cinnamon.
Lastly, drizzle with honey and freshly chopped mint.
