It is January and you and I have no money, let be honest keDezemba boss was real! I have just BEEN telling people that I will be eating peanut butter sandwiches and two minutes noodles for the rest of month. So I decided to combine the two and make a satay type inspired budget friendly dished.
2 minutes noodles
1 tablespoon macadamia nut butter
1/2 tablespoon soy-sauce
1 teaspoon of sesame oil
1 clove of garlic
1/2 teaspoon of chilli flakes
Cook 2 minutes noodles according to the instructions on the packet (leave the seasoning out)
While the noodle cook, mix the nut butter, soy sauce, sesame oil and chili flakes together in a bowl.
Mince garlic and add it to the sauce.
Add some of the two minute noodle water to the sauce to loosen it
Mix the sauce through the noodles.
Marinate the chicken with soy sauce, garlic, grated ginger
Mix the chicken in to the noodles and top with spring onions.
