This is one of those family constants, you know the one, your moms go to salad. Around Christmas time my mom make this vibrant green salad that is a combination of green beans, cucumber, feta and walnuts. Its always a welcome change to the steamed green beans we have BEEN having all year.
So last week, given that I had most of the ingredients I decided to change it up a little by swapping out the walnuts for peanuts and adding an asian inspired dressing.
For the salad:
French green beans
For the dressing
2 teaspoons sesame oil
1 teaspoon soy sauce
1/2 a teaspoon of honey
1 small clove of garlic (minced)
Salt and pepper to taste
Hot sauce/ chlli flakes
Steam the green beans for 4 minutes and then place them in an ice-bath to stop the cooking process and cool them down.
While the green beans cook slice the cumber, I prefer length wise so that you get strips instead of rounds.
Once the green beans have cooled, place the beans and cucumber in a bowl. Top with feta and peanuts (toasting them would give them an extra crunch)
To make the dressing mix the sesame oil, soy sauce, honey, garlic, salt and pepper and chili flakes (use hot sauce if you don't have chili flakes) in a bowl and pour of the salad.
