So it's 2018 and my resolution is to blog more, and yes I know I said that last year, but this year I am going to challenge my self to blog/post for 100 days. So, prepare yourselves, there might be a few Joburg's Best Pizza Restaurants and Ashleigh's favourite chinese take-aways. But mostly there will be home cooked food and lots of it - because cooking makes me happy and I am striving to be more happy in 2018.
This first post, was inspired and let me be honest, created by Philip Munda, doctor by day, chef by night and the person I enjoy cooking for and eating with the most.
This year we are going to start small, and with a firm favourite avo on toast (the reason some millennials cant afford land, apparently).
Salt and pepper
Preheat your oven to 180 degrees celsius.
Slice your tomato into thick slices. Half of the slices will be used fresh and the other half will be roasted.
Marinate your 'roast' tomato slices with olive oil, minced garlic, salt, pepper and a squeeze of lemon.
Place on a baking tray and roast for 10 minutes until soft
In the mean time, pop your bread in the toaster and peel and slice your avo
Now butter your toast, then place your fresh slices of tomato topped by your roasted tomatoes, followed by the slices of avo, salt, pepper and some torn basil leaves.
