Butternut, that versatile oddly shaped vegetable that I always seem to have but never actually eat. Ok not never, this is me we are talking about after all.
Normally, I just slice and drizzle em with some olive oil and roast them in the oven, but in an effort to expand my food skills and not throw away food I am going to stretch a whole butternut over a few meals! Welcome to Ashleigh's Kitchen ingredient of the week.
First up was this butternut make and cheese, slightly sweeter than normal mac and cheese (obvs) but addictively delicious - like in that weird way that salted caramel is.
